Raspberry Chocolate Brownie Cookies
I'm a fan of creating recipes that cut calories and are easy to make. I also love experimenting with brownies, as you can add a lot of fruit flavors to the chocolate base. And as my friends know, I like adding different flavors of vodka! Cut 1/5 of the calories and over 1/2 of the cholesterol with this simple and tasty recipe.
Ingredients:
1 box brownie mix (pick your favorite brand)
1 cup chopped dried cherries (pick your favorite dried fruit)
1/4 cup unsweetened apple sauce
1 shot raspberry vodka (pick your favorite flavor or experiment)
3 egg whites or 2 cups egg substitute
Steps:
1. Preheat oven to 350 degrees.
2. Empty brownie mix into large mixing bowl.
3. Add egg whites, vodka, and apple sauce and stir with spoon or spatula.
4. Chop dried fruit into small pieces and fold them into the batter.
5. Line cookie sheet with parchment paper or apply non-stick spray.
6. In 1-2 tablespoon scoops, add batter to cookie sheet.
7. Bake for 7-10 minutes.
NOTE: Cookies will be thin and a bit gooey. Don't be alarmed. They taste great!
NOTE 2: If you are a fan of orange, cranberries, and chocolate, I would recommend you adding dried cranberries and orange vodka to the mix. If you don't want the vodka, even though it cooks out, feel free to add 1-2 shots of orange juice.
